Homemade Carrot Cake with Homemade Cream Cheese Frosting



    We mothers are always looking for new recipes for cakes as it’s the best way to indulge our families. Last Saturday, my son invited his friends to stay over, and I made them this delicious carrot cake with home made cream cheese frosting! They loved it.

    You’ll Need (for the cake):

    150 g of finely shredded carrots.
    130 g of all purpose flour.
    1/2 tsp. of baking powder.
    1/2 tsp. of baking soda.
    1/2 stp. of salt.
    80 g of caster sugar.
    80 g of brown sugar.
    1/4 tsp. of nutmeg powder.
    1/4 tsp. of cinnamon powder.
    100 g of corn oil.
    1/2 tsp. of vanilla extract.
    2 lightly stir eggs.
    40 g chopped walnut.
    40 g raisins

    You’ll Need (for the cream cheese frosting):

    150 g of cream cheese (at room temperature).
    40 g of butter (at room temperature).
    70 g sifted icing sugar.
    1 tbsp. of lemon juice.
    Finely grated lemon zest from 1 lemon.
    How to:
    First preheat the oven to 180c. Grease and line a baking pan.
    In a mixing bowl, sift the flour, cinnamon, nutmeg, baking powder and baking soda. Add in the caster sugar, salt and brown sugar and mix all the dry ingredients together.
    In the same bowl, add the finely shredded carrots, corn oil, vanilla extract and eggs and beat all together until combined.
    At the end, add the walnut and dried fruits and mix well.
    Pour the mixture in the baking pan and bake for 40 minutes.
    Let rest for 1 minute before removing the cake to cool on a wire rack and decorate with the cream cheese frosting.

    To make the cream cheese frosting, beat together the cream cheese and butter until light and creamy, then add in the icing sugar and beat on low speed.
    Add the lemon juice and zest and beat until combined.
    You can prepare the frosting before making the cake and letting it cool in the fridge and you can also store it for later use.

    Simple, easy and yummy! The homemade cream cheese is so delicious especially with that lemon flavor. And the best part is they didn’t even realize that there’s carrots in the cake!
